对老陈醋中掺杂食用

摘要采用偏最小二乘法(PIS)建立了山西老陈酷中摻杂食用
冰醋酸的同步荧光定量检測模型。配制
不同体积比的食用冰醋酸和4种老陈醋混合样品共124个,其中每种醋样21个校正集,10个预测集。在
激发波长为250nm~550nm,波长间隔为70nm处收集同步荧光信号。采用交互验证方法进行建模,并使用
所建模型对未知样品进行预测。研究结果表明,相对偏差在5%之间,预测结果准确可靠,预测最低掺假
曼可达10%。因此,利用同步荧光技术结合偏最小二乘法检測老陈醋中食用冰酷酸的掺杂量是可行的。

Abstract By partial ]east squares(PLS )and synchronous fluorescent, quantitative detection model was established for
edible acetic acid in adulterated Shanxi mature vinegar. 124 kinds of mixed samples of edible acetic acid and four
kinds of mature vinegar were compounded, in which each of vinegar has 21 calibration sets and 10 validation sets S-

the built model indicate that the relative deviation was5% the predicted results were accurate and reliable, the forecast

有调味功能,还含有丰富的营养物质。经常食用醋预防动脉硬化、治疗糖尿病等保健功能。山西老陈
